Have you tried playing different PLAYSTYLES? If you are bored of ganking junglers, try playing a whole game with a control jungler (ward the enemy jungle, invade and set up picks as much as possible). If you are tired of farming in lane, pick a roaming champ like rengar top or eve mid, grab a gp and mobility boots and farm champions. If you are tired of playing a standard support, pick a bruiser and make a kill lane.
The meta shifts over reasonably short periods of time. I personally feel the the meta is about to shift again with the changes to BoRK. Not only does it help deal with the health stacking, but the active gives some cc to champions who need it like fiora, shyvana, etc. The cheaper cost of Cutlass gives more ganking power to junglers lacking CC.

i think it's worse when someone can only play ONE role. I have no problem with people who can't play a particular role or two.
I personally never play adc, this is simply because I can't kite to save my life, i just don't have the mechanics for it. I DO make sure to let my team know this as soon as I get into champ select though.
Some people just don't enjoy a particular role. For example, I am not a fan of top lane- I prefer roaming around as a jungler, mid laner, or roaming support- being involved with the team. I'm not a fan of the island that is top lane, especially when you lose top lane, which is the most depressing and frustrating situation in league if you ask me. If a particular role doesn't fit someone's playstyle, or is extremely unenjoyable to them, I wouldn't want to force them. It's still just a game, so I don't want to force people to play a game in a way that they won't have fun.
The ONLY exception to this is "I don't play support". This annoys me. I don't care if you don't have a traditional support character, you HAVE to have SOMETHING that you can send bot lane. Everyone gets stuck supporting every now and again, so you had better have at least one champ you enjoy playing as support, be it a rengar, or an anivia, jarvan, it doesn't matter, have SOMETHING

You have the ability as a jungler to create opportunities for your team to make a come back even with a bad start, but it requires a finer knowledge of the game, excellent mini map awareness, and your team mates to follow you (and wards). People in bronze are incredibly predictable and as long as you can recognize the behavior, you can punish it. A few examples:
As a jungler, you should have a good grasp on buff timers. The 2nd/3rd spawning of blue buff is usually fed to the mid laner, so its easy to set up a pick in the jungle for the mid laner as they go get/return from taking blue.
If an enemy laner has just roamed to another lane, or you spot them leaving lane in a manner that indicates roaming, there a few "path of least resistance" routes that they will almost be certain to take. A bronze leaguer won't be firing off skill shots into bushes in their own jungle, they are almost certain to face check, so position yourself in a way that you can capitalize on this.
If you notice their is a big, fat stack of your own minions built up somewhere on the map, there is a good chance that their is gonna be someone heading down to collect all that sweet, sweet cs. Set up an ambush for that unsuspecting enemy, then use that massive wave and 4v5 situation to push a tower or two. The same thing works at enemy blue and red buff.
The most important thing when attempting these pick offs is to be patient. Lets say you have to sit in a bush for 30 seconds- if your team is really losing badly, the cs you'd get in that 30 seconds isn't gonna bring you back into the game, but getting a pick and then a free objective like dragon, baron, or a tower WILL help bring the game back into your favor.
Play a few games where you practice warding the enemy jungle. You should already be watching the mini map like a hawk as the jungler (you don't have to focus on avoiding harass or timing last hits while farming as the laners do, so no excuses), so use this awareness to make plays for your team. Even if you don't get a kill, if you get them low enough that they have to back, go take their tower or drake or something.

You're missing an important option: why not zoidburg?
I think a good question to ask yourself when deciding between the two:
"is my jungler/team capable of controlling our blue buff?"
If the answer is no, I make sure to get at least a chalice, as tear by itself isn't enough mana regen to sustain the cost of stacking it in a timely fashion.
There are other questions to consider, but i'm not gonna cover those, sorry

watchu talkin bout willis? There is plenty of carry diving in the pro scene. Have you ever seen a nocturn or a Vi ult a tank or bruiser? No. They go after the carries. Some teams prefer to protect their own carry and hence won't dive, but you have entire team comps designed around diving carries. What games have you been watching?

Seriously dekar is insane. He gets 1st blood lvl 1 in half of his games, and at lvl 2 in almost all the rest.
Top rengar's burst is too good early. Double Q does about 350 damage not taking resistances into account. Throw in an E, ignite and a an AA or 2 and you just destroy anyone and everyone 3 minutes into the game
Watch dekar- I hate top lane, but if I can learn to be half as good as he is, I might actually enjoy it

For the record, your post says "keep to a minimum of 3 champions" when I think you meant max 3... I'm only choosing 1 champ as I don't have enough experience late game with other late game carries to compare them to each other
If we are talking solo queue:
Evelynn- sure you got champs like jax and nasus who put out beast damage while being tanky little mofos, but when the spawn timers are in the 70 second range, getting a pick off is often the end of the game, and NO ONE is better at finding picks than Evelynn. You absolutely cannot be out of position late game with Eve on the field.

Eve got a little stronger since her nerf thanks to the buff to dfg, zhonya's, and deathcap. If you are having a hard time playing with her now, I don't know what's wrong. As long as you ult to initiate rather than execute, she is exactly the same as before and I still get 20+ kill games
